Vegetables are often carriers of human pathogens that regularly cause food-borne illness outbreaks world-wide. We have spent many years of research in the area of food hygiene and probiotics, with the aim to find bacterial strains that are able to inhibit the growth of pathogens, and we have sucessfully found bacterial strains with these proporties in a laboratory setting. Furthermore, we found some of these strains to have beneficial effects in field settings.
