Techfundingnews reported that Copenhagen-based food-tech startup REDUCED earlier this month announced it had successfully raised € 8 million in its latest funding round, led by the European Circular Bioeconomy Fund (ECBF). The investment will fuel REDUCED’s expansion into the DACH region and support the development of its innovative upcycled food ingredients.

Founded in 2020 by William Anton Lauf Olsen and Emil Munck de Voss, REDUCED utilizes a proprietary fermentation process to turn food and agriculture side streams into premium, natural flavors. By repurposing these by-products, the company aims to reduce CO2 emissions by up to 80% compared to traditional savory ingredients, while providing cost-effective solutions for both food service and ingredient sectors.

“REDUCED is at the forefront of developing sustainable and clean-label savory ingredients with a best-in-class flavor profile. The combination of upcycled side streams and fermentation technology is a great example of what circular bioeconomy is all about,”

says Mathias Brink Lorenz, Investment Director at ECBF,

The DACH region has proven to be a strategic focus for REDUCED, where the company has already established key partnerships with food distributors, industry blending houses, and Michelin-starred restaurants. This momentum underscores the company’s commitment to providing high-quality, sustainable ingredients that meet the highest culinary standards.

The company’s products, distinguished by their complex flavors and versatile applications, are produced in state-of-the-art facilities in Copenhagen’s North Harbour. REDUCED works closely with the University of Copenhagen to further refine its processes, enhancing the flavor profiles of its ingredients while driving sustainability in the food industry.

“ECBF’s deep commitment to circularity, sustainability, and technology aligns perfectly with our mission to elevate the flavor potential of upcycled side streams by creating high-quality food ingredients. With ECBF’s strong presence in Germany, we are well-positioned to boost our efforts in the DACH region.”

says Emil Munck de Voss, Co-Founder and CEO

REDUCED’s approach not only addresses the growing demand for sustainable food solutions but also helps businesses in the food sector lower production costs while maintaining a strong focus on environmental responsibility. As REDUCED continues to grow, the company aims to expand its reach and further solidify its position as a key player in the circular bioeconomy.
